There are lots of very fresh young zucchini, cucumbers and roma tomatoes for your salads in Christmas week. It will be hot so salad and uncooked cool vegetables are so tempting. Have you tried grating zucchini in a salad, especially if you want to feel satisfied without too many calories?

Can’t forget the new green beans. I’d eat them raw but they are delicious very lightly cooked whichever way you like to cook them.
