Katie’s Warm Horta Salad recipe.
Half Spanish onion, sliced
1 clove garlic, finely chopped
Half a red chilli, finely chopped (to taste)
1 tbsp olive oil
1 pkt Champions Mountain Organics Horta, nasturtiums put aside
1 cup chickpeas
5 – 10 fat kalamata olives (to taste)
2 tsp capers
3 tbsp water plus optional 2tsp miso mixed in
Saute onion for a few minutes in olive oil, add garlic & chilli & let sizzle for 30 seconds
Add Horta & miso/water or just the water if not using miso
Add chickpeas, olives & capers & sauté for 2 – 5 minutes
Serve in a wide bowl with fresh nasturtiums on top
